The story behind the Chili Verde’s concept is that we wanted to do Mexican food, but we didn’t want to do the same old thing. We sat down and looked at certain things that we and a lot of people like and dislike about Mexican food. One of them is that we all like the flavors, but don’t like the greasy, excessive yellow cheese and under par quality of proteins. So we decided that we would buy only quality meats, like choice arrechera (skirt steak) marinated in our own special blend. The chicken marinated also in a fresh achiote and lime blend and we use lean pork butts to make our carnitas. We slow roast and grill our meats instead of frying and using excessive oils. We don’t use lard in our charro beans, and we use steam to make our fresh cilantro- lime rice. We have taken the time to discover the many regional specialties of Mexico to give you our guest those special tastes and authenticity that we all want to experience today.
